Directions
1. Mixing Dough & First Proof
In a large bowl, mix flour, yeast, salt, and sugar. Add warm water and melted butter. Knead until the dough is smooth. Cover and let rise for 1 hour or until doubled in size.
2. Degassing & Rolling
Punch down the risen dough on a lightly floured surface. Shape into a rectangle or circle, flatten lightly, and flip it over.
3. Butter Layer & Folding
Spread 100g of butter evenly over the flipped dough. Fold into thirds (like a letter). Fold again into thirds and wrap in plastic. Chill in the fridge for 30 minutes.
4. Rolling, Filling & Final Proof
Roll the chilled dough into a large circle again. Spread remaining butter and sprinkle mozzarella evenly. Roll tightly, slice into 6 pieces, and arrange on a baking tray. Cover and let rise again for 1 hour.
5. Baking
Mix egg yolk with milk and brush on top of the rolls. Preheat oven to 180°C and bake for 30 minutes, or until golden.
