  • 1/2 banana
  • 1 egg
  • 3.5 ounces (100 grams) mascarpone or cream cheese
  • 1/2 teaspoon baking powder
  • 2 tablespoons rice flour
  • 1 teaspoon unsweetened cocoa powder
  • 1/4 cup (50 grams) sugar-free chocolate
  • 1 tablespoon coconut oil

Directions

  1. Mash the banana in a bowl. Add the egg, mascarpone (or cream cheese), and baking powder. Mix until smooth.

  2. Stir in the rice flour. Divide the mixture evenly between two bowls. To one bowl, add the cocoa powder and mix well.

  3. In a greased round baking dish, alternate spooning the plain mixture and the cocoa mixture to create layers. Bake at 360°F (180°C) for 20–25 minutes, or until a toothpick inserted into the center comes out clean.

  4. While the cake cools, melt the sugar-free chocolate with the coconut oil in a bowl. Spread the melted chocolate mixture over the cooled cake.
