  • 500 ml milk
  • 5 egg yolks
  • 2 sachets of vanilla sugar (or 1 vanilla pod)
  • 40 g cornstarch
  • 100 g sugar
  • 50 g butter
  • 80 g sugar
  • 40 g water
  • 40 g lemon juice

Directions

  1. In a bowl, beat the 5 egg yolks.Mix 2 sachets of vanilla sugar, 40 g of cornstarch, and 100 g of sugar together well.Add 500 ml of milk and 50 g of butter to the mixture and heat on the stove, stirring continuously. Once the mixture becomes thick and sticky, remove it from the heat, and wrap it in a bowl, covering with a layer of plastic wrap or parchment paper to avoid a skin forming.

  2. In a bowl, mix 4 eggs, 100 g of sugar, 50 g of icing sugar, and the zest of one lemon. Add 60 g of milk (or cream), 160 g of flour, 50 g of almond powder (or more flour if preferred), 7 g of baking powder, a pinch of salt, and 150 g of melted butter. Stir to combine well. Pour the batter into a Madeleine mold. Bake at 180°C (350°F) for about 20 minutes, until golden and firm to the touch.

  3. In a small saucepan, combine 40 g of water, 40 g of lemon juice, and 80 g of sugar.Heat on the stove, stirring until the sugar dissolves completely. Once it reaches a syrupy consistency, remove from heat.

  4. Once the Madeleine biscuits are baked, pour the syrup over the top of each Madeleine.Add a generous amount of pastry cream on top of the biscuits. Optionally, decorate with fresh strawberries or other fruits of your choice. Enjoy your Madeleine Biscuits with Pastry Cream!
