  • 2 potatoes
  • 4 eggs
  • Mozzarella cheese (grated)
  • 5 tablespoons mayonnaise
  • Salt (to taste)
  • 2 tablespoons olive oil
  • 1/4 onion
  • Bacon (as desired)
  • Cheddar cheese (optional)

Directions

  1. Place the 4 eggs in a pan of water and boil for 12 minutes until hard-boiled. Peel the boiled eggs and transfer them to a bowl. Mash the eggs thoroughly with a slotted spoon. Add 5 tablespoons of mayonnaise and mix well. Incorporate mozzarella cheese into the mixture and stir until combined. Set aside.

  2. Finely chop 1/4 of an onion and rinse it well in water. Set aside. Cut the 2 potatoes into quarters and place them in a bowl of water. Microwave the potatoes for 6 minutes, then remove and pat them dry with a tissue. Flatten each potato piece gently using a glass or similar tool.

  3. Heat 2 tablespoons of olive oil in a pan over medium-low heat. Add the flattened potatoes to the pan and fry until golden brown. Remove the potatoes from the pan and sprinkle them lightly with salt. Place a spoonful of the egg mixture on top of each potato slice. Top with bacon and cheddar cheese (if using). Cover the pan with a lid and cook for a few minutes until the cheese melts and everything is heated through.
