Directions

Boil the two large potatoes until tender. Carefully cut off one side of each potato to create an opening. Scoop out the insides of the potatoes, ensuring the skins remain intact. Place the scooped-out potato in a bowl.

Mash the potato insides in the bowl. Add unsalted butter, salt, pepper, and chili powder (if using) to the mashed potatoes. Gradually mix in the 140 g milk until smooth. Add mozzarella cheese (as desired) and mix thoroughly.

Fill the hollowed-out potato skins with the mashed potato mixture. Top with chorizo, bacon, or both, and sprinkle additional cheese if desired. Place the stuffed potatoes in an air fryer and cook at 200°C (392°F) for 5 minutes.

Remove the potatoes from the air fryer. Sprinkle parsley and grated Grana Padano cheese on top. Serve hot and enjoy!
