Linzer Cookies are a delightful Austrian dessert made with buttery shortbread, filled with sweet strawberry jam, and decorated with chocolate. Perfect for holidays, special occasions, or as a tea-time treat, these sandwich cookies are both elegant and delicious

- 1 egg
- 60 g sugar
- 50 ml oil
- 125 g butter (at room temperature)
- 1 tbsp vanilla extract
- Pinch of salt
- 350 g flour
- 8 g baking powder
- Strawberry jam
- Chocolate (for decoration)

In a bowl, combine: 125 g butter, 60 g sugar,1 tbsp vanilla,1 egg,Mix well, then add:,50 ml oil,350 g flour,8 g baking powder,Knead until a smooth dough forms.

Wrap the dough in polythene or plastic wrap. Refrigerate for 5 minutes. Roll out the dough and use a round cutter to cut out circles. For half of the cookies, make a hole in the center using a smaller cutter.

Preheat the oven to 180°C (356°F). Bake the cookies for 10–15 minutes, or until lightly golden. Heat the strawberry jam for a few minutes to make it smoother. Spread jam on the bottom cookie, place a holed cookie on top, and press gently. Drizzle melted chocolate over the cookies and garnish as desired.
