  • 2½ cups (250 g) oatmeal
  • 3.5 oz (100 g) sesame seeds
  • 5 oz (140 g) sunflower seeds
  • 3 tbsp psyllium husk
  • 3 tbsp flax seeds
  • 2 tbsp chia seeds
  • 2.5 oz (70 g) pumpkin seeds
  • 1 tsp salt (or to taste)
  • 2¼ cups (540 ml) very hot water

Directions

  1. In a large mixing bowl, combine the oatmeal, sesame seeds, sunflower seeds, psyllium husk, flax seeds, chia seeds, pumpkin seeds, and salt. Pour in the very hot water and stir well to combine. Cover the bowl with plastic wrap and let it sit for 30 minutes to allow the mixture to absorb the water and thicken.

  2. Preheat the oven to 360°F (180°C). Transfer the dough into a greased or parchment-lined 4-quart baking pan. Bake for 45-50 minutes, or until the bread is firm and golden brown on top.

  3. Let the bread cool before slicing. It pairs well with a spread made from cream cheese, canned tuna, minced garlic, and chopped dill.
