Directions
1. Prepare the Cookie Dough
In a large bowl, whisk together eggs, sugar, baking powder, and soft butter. Add vanilla sugar, salt, turmeric (optional), lemon zest, and flour. Mix well to form a soft dough, wrap in plastic, and chill for 30 minutes.
2. Make the Lemon Filling
In another bowl, mix egg, yolk, sugar, butter, cornstarch, lemon zest, and juice. Cook gently over low heat, stirring constantly until thickened. Let cool and refrigerate wrapped in plastic.
3. Form & Bake the Cookies
Take out the dough and make small balls. Slightly flatten each and press a small dent in the center. Fill the center with lemon filling. Bake in a preheated oven at 180°C for 12–15 minutes or until the edges turn golden.
