Ingredients
- 3 onions, chopped (600g)
- Vegetable oil
- 1kg lamb or goat, cut into pieces
- 2 tsp garlic, chopped (20g)
- 1 tsp each: black pepper, cumin, coriander, paprika
- 2 tbsp tomato paste (40g)
- 1 cup tomato puree (250ml)
- Hot water
- 500g okra, ends removed and chopped
- ½ tbsp salt
- Fresh coriander, for garnish

Directions
1. Step
Heat a pot over medium heat with a little vegetable oil. Add the chopped onions and sauté until caramelized.

Add the lamb or goat to the pot and cook until it changes color.

Stir in 1 tsp chopped garlic, the spices, tomato paste, and tomato puree. Pour in enough hot water to cover the meat. Simmer over medium heat for 1 hour.

In a separate pan, heat a little vegetable oil over medium heat. Fry the okra until slightly golden, then stir in the remaining 1 tsp of chopped garlic.

After 1 hour, add the fried okra to the pot with the meat. Season with salt. Transfer everything to a tajine clay pot. Cover with parchment paper and aluminum foil.

Place the tajine in a preheated oven at 400°F (200°C) and bake for 30 minutes.
