Ingredients

  • 3 onions, chopped (600g)
  • Vegetable oil
  • 1kg lamb or goat, cut into pieces
  • 2 tsp garlic, chopped (20g)
  • 1 tsp each: black pepper, cumin, coriander, paprika
  • 2 tbsp tomato paste (40g)
  • 1 cup tomato puree (250ml)
  • Hot water
  • 500g okra, ends removed and chopped
  • ½ tbsp salt
  • Fresh coriander, for garnish

Directions

1. Step

Heat a pot over medium heat with a little vegetable oil. Add the chopped onions and sauté until caramelized.

2. Step

Add the lamb or goat to the pot and cook until it changes color.

3. Step

Stir in 1 tsp chopped garlic, the spices, tomato paste, and tomato puree. Pour in enough hot water to cover the meat. Simmer over medium heat for 1 hour.

In a separate pan, heat a little vegetable oil over medium heat. Fry the okra until slightly golden, then stir in the remaining 1 tsp of chopped garlic.

After 1 hour, add the fried okra to the pot with the meat. Season with salt. Transfer everything to a tajine clay pot. Cover with parchment paper and aluminum foil.

6. Step

Place the tajine in a preheated oven at 400°F (200°C) and bake for 30 minutes.

7. Step

Sprinkle with fresh coriander and serve hot with bread or rice.
