Directions
-
Chop 420g of tofu with a knife and lightly mash it in a bowl. Place the mashed tofu in a cloth bag, squeeze out excess water, and transfer it back to the bowl.
-
Crush the heads of 50g of wild chives with a fork, finely chop, and add to the tofu. Finely chop the carrots (2 tbsp) and red pepper, then add them to the tofu. Break 1 egg into the mixture, then season with 1/3 tsp salt and black pepper to taste. Mix everything thoroughly.
-
Divide the mixture into 12 portions and shape them into small balls. Flatten the balls into patties with your hands. Heat a pan with cooking oil over low heat, place the patties in the pan, and gently press them to flatten further. Cook until golden brown on one side, then flip using a spoon and cook the other side until golden brown. Remove from the pan and set aside on a tray.
-
In a bowl, combine 1 tbsp wild chives, 4 tbsp soy sauce, 1 tbsp water, 1/2 tsp red pepper powder, and 1/2 tsp oligosaccharide. Mix well until the ingredients are fully combined.
-
Arrange the golden-brown patties on a plate and serve with the dipping sauce. Enjoy!
