Ingredients

  • 420g tofu
  • 50g wild chives
  • 2 tbsp finely chopped carrots
  • 1 red pepper (finely chopped)
  • 1 Cheongyang pepper (optional, finely chopped)
  • 1 egg
  • 1/3 tsp salt
  • Black pepper to taste
  • 1 tbsp finely chopped wild chives
  • 4 tbsp soy sauce
  • 1 tbsp water
  • 1/2 tsp red pepper powder
  • 1/2 tsp oligosaccharide (or substitute with honey or corn syrup)

Directions

  1. Chop 420g of tofu with a knife and lightly mash it in a bowl. Place the mashed tofu in a cloth bag, squeeze out excess water, and transfer it back to the bowl.

  2. Crush the heads of 50g of wild chives with a fork, finely chop, and add to the tofu. Finely chop the carrots (2 tbsp) and red pepper, then add them to the tofu. Break 1 egg into the mixture, then season with 1/3 tsp salt and black pepper to taste. Mix everything thoroughly.

  3. Divide the mixture into 12 portions and shape them into small balls. Flatten the balls into patties with your hands. Heat a pan with cooking oil over low heat, place the patties in the pan, and gently press them to flatten further. Cook until golden brown on one side, then flip using a spoon and cook the other side until golden brown. Remove from the pan and set aside on a tray.

  4. In a bowl, combine 1 tbsp wild chives, 4 tbsp soy sauce, 1 tbsp water, 1/2 tsp red pepper powder, and 1/2 tsp oligosaccharide. Mix well until the ingredients are fully combined.

  5. Arrange the golden-brown patties on a plate and serve with the dipping sauce. Enjoy!
