  • 1 tablespoon salt
  • Vinegar (a small splash for boiling eggs)

Directions

  1. Place 4 eggs in a pan and cover them with water. Add 1 tablespoon salt and a splash of vinegar to the water. Bring the water to a boil and cook for 15 minutes until the eggs are hard-boiled. Once cooked, cool the eggs in cold water, peel them, and cut each egg into 10 pieces.

  2. Chop the green onions and fish cakes into small pieces. In a pan, combine 1 teaspoon red papaya paste, 1/2 teaspoon sugar, 1/2 teaspoon soy sauce, and 150 ml water. Mix well. Cook the mixture over medium heat for a few minutes. Add the chopped green onions and fish cakes to the pan and cook for another 2–3 minutes. Gently add the boiled egg pieces to the pan. Spoon the sauce over the eggs and cook until everything is well-coated and heated through.
