Directions

1. Step

In a mixing bowl, cream together 120 g of butter, 80 g of powdered sugar, vanilla extract, and a pinch of salt until smooth. Add the egg and mix well. Incorporate 0.5 tsp of baking powder and 300 g of flour gradually, mixing until a soft dough forms. If needed, add a little more flour. Knead the dough gently with your hands. Cover the dough and refrigerate it for 15-20 minutes.

2. Step

Remove the dough from the refrigerator. Place parchment paper on top of the dough and roll it out evenly. Use a cookie cutter to cut the dough into rounds. Transfer the cut rounds to a baking sheet. Create a small hole in the center of each round for filling. Decorate the cookies as desired.

3. Step

Preheat the oven to 180°C (356°F). Bake the cookies for 12-15 minutes until they are lightly golden. Once baked, allow the cookies to cool. Spread jam on one biscuit and sandwich it with another. Roll the edges in coconut flakes. Fill the center hole with more jam. Enjoy your delicious cookies!
