Directions
1. Marinate the Chicken
Cut chicken into bite-sized pieces. Place in a bowl and mix with salt, pepper, and lemon juice. Cover and refrigerate for 1 hour.
2. Prepare the Sauce
Slice pumpkin into 1cm thick pieces. In a separate bowl, mix peanut butter, soy sauce, cooking wine, honey, and garlic powder to make the sauce.
3. Cook Chicken and Pumpkin
Toss marinated chicken in whole wheat flour. In a hot pan, fry the pumpkin slices until golden and tender. Set aside. In the same pan, fry the chicken pieces until juicy and golden brown.
4. Combine and Serve
Add butter and the prepared sauce to the fried chicken, mixing well. Gently stir in the cooked pumpkin, careful not to break the pieces. Let the sauce thicken slightly, then turn off the heat. Plate and garnish with a dash of pepper and chopped peanuts if desired.
