- 180g biscuits of your choice
- 70g butter, melted
- 450g Philadelphia cream cheese
- 140g strawberry puree
- 1 ½ sheets gelatin
- 70g sugar
- 180g heavy cream (30% fat), whipped
- 150g strawberry purée
- 30g sugar
- 3 tbsp lemon juice
- 1 sheet gelatin

Directions

Crush the biscuits into fine crumbs and mix them with the melted butter. Press the mixture firmly into the bottom of a 20cm round pan to form an even base. Set aside.

Dissolve the gelatin in the warmed 140g strawberry purée. In a separate bowl, beat the Philadelphia cream cheese and sugar until smooth. Gently fold in the gelatin mixture, followed by the whipped cream. Pour the filling over the biscuit base and smooth the top.

In a small saucepan, combine 150g strawberry purée, sugar, and lemon juice. Heat gently. Dissolve 1 sheet of gelatin in the mixture, then let it cool slightly. Pour the topping over the cheesecake and spread evenly.
