Directions
-
In a pan, heat 1 tsp of sugar over low heat until dissolved. Add 100 ml of hot water and stir until fully combined. Mix in 260 g of sugar, 1 tsp of cinnamon, 1/2 tsp of ginger, 1/4 tsp of cardamom, and 1/4 tsp of nutmeg. Stir well. Gradually add 200 g of flour to the mixture, stirring until smooth. Transfer the mixture to a bowl and let it cool slightly. Once cooled, add 1 egg and 50 g of softened butter. Mix well until fully combined. Stir in 1 tsp of baking soda. Gradually add 450 g of flour (and a bit more if needed) while mixing with your hands to form a soft dough.

Divide the dough into 40 g portions and roll each piece into a ball. Place the dough balls onto a baking sheet lined with parchment paper. Press each ball lightly with your hand to flatten it slightly. Bake in a preheated oven at 180°C (356°F) for 15 minutes.
