- 60g granulated sugar
- 1 tbsp water
- 1 tbsp hot water
- 200g pumpkin
- A pinch of salt
- 50g sugar
- 3 whole eggs
- 140ml heavy cream
- 120ml milk
- 30g sweetened condensed milk
- 60ml heavy cream (for topping)

Directions
1. Step
In a pan, heat 60g of granulated sugar with 1 tbsp of water until it turns golden brown. Carefully pour the caramel into a bowl containing 1 tbsp of hot water. Set aside.

Place 200g of pumpkin in a microwave-safe bowl and microwave at 600W for 4 minutes until soft. Mash the pumpkin and mix in a pinch of salt, 50g of sugar, and 3 whole eggs. In a separate pan, heat 140ml of heavy cream, 120ml of milk, and 30g of sweetened condensed milk until warm (do not boil). Gradually add the warm milk mixture to the pumpkin mixture, stirring well to combine. Pour the pumpkin mixture over the prepared caramel. Microwave at 170°C for 1 hour until set.
3. Step
Whip 60ml of heavy cream and pour it over the pudding before serving.
