  • 3 measures medium semolina
  • 1/2 measure flour
  • 1 measure butter and oil mixture (50% butter, 50% oil)
  • 1 measure water and orange blossom water mixture
  • 1 tablespoon sugar
  • 1 pinch salt
  • 300g date paste
  • 3 tablespoons sesame seeds
  • 1 tablespoon butter
  • 1/2 teaspoon cinnamon
  • 2 tablespoons orange blossom water
  • Oil for frying
  • Honey (for coating)

Directions

1. Step

In a large bowl, mix together the semolina, flour, sugar, and salt. Add the butter and oil mixture, then gradually incorporate the water and orange blossom water mixture. Knead until a smooth, pliable dough forms. Cover and let rest for about 30 minutes.

In a separate bowl, combine the date paste, sesame seeds, butter, cinnamon, and orange blossom water. Knead the mixture until well blended and shape it into long ropes.

Divide the dough into portions and roll each into thin strips. Place a rope of the date filling along one edge of the dough, then roll the dough around the filling to encase it. Flatten slightly and cut into rounds.

Heat oil in a frying pan over medium heat. Fry the parcels until golden and crispy. Remove and drain on paper towels. While still warm, dip them in honey, then strain off excess.
