Directions
1. Step
In a pan, mix 2 teaspoons of water with 30 grams of granulated sugar. Heat until it boils and turns into caramel. Remove from heat, add 1 teaspoon of hot water, and mix well. Pour the caramel into a baking dish or mold.

In a bowl, whisk together 3 whole eggs and 50 grams of granulated sugar. In a pan, heat 350 ml of milk with 10 grams of granulated sugar until warm (but not boiling). Gradually pour the warm milk into the egg mixture while stirring continuously. Add 1 teaspoon of vanilla extract and mix well.

In a bowl, mix 1 egg yolk, 15 grams of milk, 13 grams of cake flour (or rice flour), and 3 grams of cocoa powder until smooth. In a separate bowl, beat 1 egg white with 25 grams of granulated sugar until it forms soft peaks. Gently fold the egg white mixture into the egg yolk mixture until well combined.

Pour the custard mixture over the caramel in the baking dish. Gently spoon the cake batter over the custard layer. Bake in a preheated oven at 150°C (300°F) for 45–50 minutes, or until the cake is set. Allow it to cool before transferring it to a container or serving.
