Directions

1. Step

In a pot, add the washed lentils and enough water to cover them. Add ½ teaspoon salt and simmer over medium heat for 20 minutes. Drain and set aside.

In a mixing bowl, combine the flour, salt, vegetable oil, and water. Mix until a smooth dough forms. Cover and let rest for 20 minutes.

Heat a pan over medium heat and add a little vegetable oil. Saute the chopped onion until soft, then stir in the minced garlic. Add the drained lentils and mix in the cumin, coriander, black pepper, chili flakes, and vegetable bouillon. Remove from heat and fold in the chopped leek, green onion, coriander, and parsley.

4. Step

Divide the dough into 8 equal portions. Roll out each piece into an oval, then cut it in half. Shape each half into a cone and seal the edges with water. Fill each cone with the lentil mixture, then seal the top with water. (Optional) Use store-bought samosa sheets for convenience.

Heat vegetable oil in a pan over medium heat. Fry the samosas in batches until golden brown and crispy. Serve hot with your favorite dipping sauce.
