Directions
-
Halve and thinly slice the cucumber. Place it in a bowl, add 1 tsp salt, dissolve it in water, and let it marinate for 10 minutes. Peel and cut the potatoes into small pieces. Chop the carrot into small pieces. Place the potatoes in a bowl, add water, and set aside.
-
Microwave the potatoes and carrots for 10 minutes (based on a 700W microwave; adjust time as needed). Roughly mash the cooked potatoes and carrots. Chop the boiled eggs into large chunks and place them in a bowl.
-
Drain the marinated cucumbers. Rinse if too salty and squeeze out excess water. Add cucumbers to the potato and egg mixture. Stir in sugar, mayonnaise, honey mustard, salt, and ground pepper. Mix well until combined.
-
Spread mayonnaise on one side of the sandwich bread. Add a generous amount of filling, cover with another slice, and press gently. Wrap in parchment paper, cut, and serve.
