Directions
-
In a pan, combine 100 g sugar, 30 g butter, and 600 g berries. Cook over medium heat until the berries soften. Add 1 tbsp cornstarch, stir well, and cook until thickened. Set aside to cool.
-
In a bowl, mix 280 g flour and 1 tsp baking powder. Add 30 g butter and mix using your hands to form a crumbly texture.
-
In a separate bowl, whisk together 1 egg, 3 tbsp sugar, 8 g vanilla sugar, and a pinch of salt. Pour the wet mixture into the flour mixture and mix by hand to form a soft dough.
-
Divide the dough into three equal parts. Wrap one part in plastic and refrigerate for 20–30 minutes.
-
Roll out the remaining two-thirds of the dough and press it into a 22 cm tart pan. Pour the cooled berry filling over the dough and spread evenly. Roll out the chilled dough, cut it into small pieces, and arrange them on top of the filling, leaving small gaps for a lattice effect.
-
Preheat the oven to 180°C (356°F). Bake the tart for 40–45 minutes or until golden brown. Remove from the oven, let cool slightly, and sprinkle with powdered sugar before serving.
