Ingredients
- Shrimp heads and shells
- 1 onion, chopped
- 2 cloves garlic, minced
- A handful of parsley
- 2 liters of water
- 600g mixed seafood (shrimp, squid, oysters, or white fish cut into small pieces)
- 1 leek, chopped
- 1 additional onion, chopped
- 2 to 3 carrots, chopped
- 2 potatoes, chopped
- 1 zucchini (or substitute with butternut squash), chopped
- Optional: Mushrooms, sliced
- Salt and pepper, to taste
- Finely chopped coriander

Directions
1. Step
In a pot, combine the shrimp heads, shells, 1 chopped onion, 2 minced garlic cloves, 1 chopped potato, and 500 ml of water. Cover with a lid and let it simmer to create a flavorful broth.

In a separate pan, heat some oil and sauté 1 chopped onion, 3 chopped carrots, 2 chopped potatoes, zucchini, mushrooms (if using), salt, and pepper. Add a splash of water and cook for a few minutes.
