Ingredients

  • 2 cups (200 g) oatmeal
  • 1 teaspoon baking powder
  • A pinch of salt
  • A dash of vanilla extract
  • 1 cup (240 ml) milk of your choice
  • 6 dried apricots
  • 6 large dates
  • 1/3 cup (50 g) dried cranberries
  • 1 carrot, grated
  • 1 apple, chopped
  • 3 eggs
  • 1/2 cup (50 g) walnuts, chopped
  • 7-inch (18 cm) baking dish

Directions

  1. In a large mixing bowl, combine oatmeal, baking powder, salt, and vanilla.

  2. Pour the milk into the dry mixture and stir until evenly combined.

  3. Soak the dried apricots and dates together in one bowl. In a separate bowl, soak the dried cranberries. Allow them to sit for a few minutes, then drain.

  4. Grate the carrot and mix it into the oatmeal and milk mixture.

  5. Chop the soaked apricots, dates, apple, and cranberries into small pieces. Add them to the mixture along with the eggs. Stir thoroughly to combine.

  6. Transfer the mixture into a greased or parchment-lined 7-inch (18 cm) baking dish. Evenly sprinkle the chopped walnuts on top.

  7. Bake in a preheated oven at 360°F (180°C) for 45–50 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
