Ingredients

  • ½ cup (70 g) oatmeal
  • 2 teaspoons baking powder
  • 1 cup (75 g) almond flour
  • 3 tablespoons stevia (or other sweetener)
  • 2 eggs
  • ¾ cup (180 ml) almond milk (or other milk)
  • 1 teaspoon vanilla extract
  • 1½ tablespoons unsweetened cocoa powder
  • 2 tablespoons olive oil

Directions

  1. Blend the oatmeal and baking powder in a blender until finely ground. Transfer to a bowl. Add almond flour and stevia, then mix well with a hand mixer.

  2. In a separate bowl, whisk the eggs. Add almond milk and vanilla extract, then mix thoroughly. Gradually add the dry mixture to the wet ingredients, mixing with a hand mixer until smooth. Divide the batter into two equal parts. In one half, mix in cocoa powder and olive oil until well combined.

  3. Heat a pan over very low heat and lightly grease it. Pour the batters alternately in small amounts to create a marbled effect. Cover and cook for 20 to 35 minutes, or until the cake is set.  Allow to cool slightly before serving.
