  • 125g butter, at room temperature
  • 60g sugar
  • 1 egg
  • 2 tbsp oil
  • 1 tsp vanilla extract
  • 2 tbsp biscotti spread or peanut butter
  • 350g flour
  • 1 tbsp cocoa powder
  • 6g baking powder
  • 150g chopped hazelnuts
  • Egg whites (for coating)
  • Hazelnut cream (for filling)

Directions

  1. In a mixing bowl, cream together the butter, sugar, vanilla extract, and biscotti spread (or peanut butter) until smooth. Add the egg, oil, cocoa powder, flour, and baking powder. Mix until a smooth dough forms.

  2. Roll the dough into small balls. Dip each ball in egg white, then roll in the chopped hazelnuts to coat. Using your finger or the back of a spoon, make a small hole in the center of each ball.

  3. Place the coated balls on a baking tray lined with parchment paper. Bake in a preheated oven at 200°C (392°F) for 10–15 minutes, or until lightly golden. Once cooled, pipe hazelnut cream into the center hole using a piping bag or a paper cone.
