- 24g (3 tbsp) cooking wine (optional)
- 16g (2 tbsp) soy sauce
- 5g (0.5 tbsp) dark brown sugar
- 8g (0.5 tbsp) honey
- 8g (1 tbsp) cooking wine (or mirin)
- 3g (1 tsp) ginger powder (or ginger juice)
- 3g (1 tsp) garlic powder (or 0.5 tbsp minced garlic)
- 100ml fresh orange juice (about 1 orange)
- Black pepper powder (to taste)
- 1 orange (for grilling)

Directions
1. Step
Cut an orange in half and squeeze out the juice into a bowl. Set aside. Make small cuts in the chicken wings against the grain to help them absorb flavors. In a pot, add the chicken wings and enough water to cover them. Add 24g (3 tbsp) cooking wine and bring to a boil over medium heat. Let simmer for 5 minutes. Remove the wings, rinse them under running water three times to remove impurities, and set aside.
2. Step
In a pan over low heat, combine: 5g (0.5 tbsp) dark brown sugar, 8g (0.5 tbsp) honey, 8g (1 tbsp) cooking wine (or mirin), 3g (1 tsp) ginger powder, 3g (1 tsp) garlic powder (or minced garlic), 16g (2 tbsp) soy sauce, 100ml fresh orange juice. Stir well and let the mixture simmer until all ingredients are well combined.
3. Step
Add the chicken wings to the pan, coating them evenly in the glaze. Let them simmer on low heat until the sauce is reduced and absorbed by the wings. Sprinkle black pepper powder to taste. Slice the remaining 1 orange into thin rounds and place them on a wire rack. Arrange the glazed chicken wings on top of the orange slices. Bake in a preheated oven at 170°C (338°F) for 10 minutes. After 10 minutes, remove the orange slices, flip the wings, and continue baking until golden and caramelized.
4. Step
Arrange the grilled orange slices and chicken wings on a serving plate. Serve hot and enjoy!
