Ingredients

  • 90g pasta noodles
  • 1.5 liters water
  • 5g (0.5 tbsp) salt
  • 5–6 whole garlic cloves, finely chopped
  • 40g (5 tbsp) olive oil
  • 2g (1 tsp) crushed red pepper
  • Fresh parsley, finely chopped (optional)
  • 2 tbsp Parmesan cheese
  • A pinch of salt (if needed)

Directions

  1. In a large pot, bring 1.5 liters of water to a boil. Add 5g (0.5 tbsp) salt and 90g pasta noodles. Cook for about 7 minutes or until the pasta is al dente. Drain the pasta and set aside.

  2. Heat 5 tablespoons of olive oil in a large pan over low heat. Add the finely chopped garlic and sauté gently until fragrant and cooked (avoid browning). Stir in 1 teaspoon of crushed red pepper and cook for another minute.

  3. Add the drained pasta to the pan, tossing it in the garlic oil mixture. Cook on medium heat for a minute. If there's some moisture left, turn off the heat at this point. Stir in the parsley (if using) and Parmesan cheese. Taste, and if needed, add a pinch of salt.

  4. Plate the pasta and top with extra Parmesan cheese and chopped garlic for added flavor. Serve immediately.
