Ingredients

  • 2 eggs (separate yolks and whites)
  • 6 tablespoons sweetener (divided)
  • A pinch of salt
  • 1 teaspoon vanilla extract
  • 1 cup (100g) oatmeal
  • 1 teaspoon baking powder
  • 1/3 cup (80g) butter, melted
  • 14 ounces (400g) Greek yogurt
  • 1/2 cup (55g) cornstarch
  • 8-inch (21 cm) baking dish

Directions

  1. In a bowl, whisk the egg yolks with 4 tablespoons of sweetener, a pinch of salt, and vanilla extract until smooth. In a blender, grind oatmeal until fine, then mix it with baking powder. Add the oatmeal mixture and melted butter to the egg yolk mixture. Stir until well combined.

  2. In a separate bowl, beat the egg whites with 2 tablespoons of sweetener, salt, and vanilla extract until frothy. Add Greek yogurt and gently mix with a spoon. Stir in cornstarch and mix until smooth.

  3. Grease an 8-inch (21 cm) baking dish. Pour the oatmeal mixture into the dish and spread evenly. Gently pour the yogurt mixture over the top and level it. Bake in a preheated oven at 360°F (180°C) for 35-40 minutes, or until golden brown and set.
