  • 2 whole eggs
  • 60 g sugar
  • 52 g rice flour
  • 8 g cocoa powder
  • 30 g heavy cream
  • 120 g couverture sweet chocolate
  • 60 g milk
  • 170 g heavy cream
  • 10 g sugar
  • 5 Ferrero Rocher chocolates

Directions

  1. In a bowl, mix: 2 whole eggs, 60 g sugar, 52 g rice flour, 8 g cocoa powder, 30 g heavy cream. Pour the mixture into a 15 cm round cake pan. Bake at 170°C (338°F) for 20–25 minutes. Once baked, let the cake cool completely, then divide it into three equal layers.

  2. In a bowl, mix: 120 g couverture sweet chocolate, 60 g milk. Stir until smooth and well combined.

  3. Place a bowl over another bowl filled with cold water to keep the mixture cool. Combine the following in the top bowl:, 170 g heavy cream, 10 g sugar,  100 g of the prepared chocolate mixture (from Step 2). Mix thoroughly until smooth and creamy.

  4. Place the first layer of cake on a serving plate. Spread a small amount of the cream filling over the layer. Add the second layer of cake on top and repeat the process by spreading more cream filling. Place the third layer of cake on top. Spread the remaining chocolate mixture evenly over the top of the cake. Garnish with 5 Ferrero Rocher chocolates.
