Directions

1. Step

Preheat the oven to 170°C (338°F). In a bowl, whisk together 2 whole eggs, 60g sugar, 60g cake flour, 15g milk, and 10g melted unsalted butter until well combined. Pour the batter into a 15cm cake pan and bake for 20–25 minutes. Let it cool completely.

2. Step

In a separate bowl, mix 1 whole egg, 15g melted unsalted butter, 15g sugar, 30g cake flour, 4g cocoa powder, and 120ml milk. Lightly grease a pan with cooking oil and cook the mixture in small portions, shaping them into thin loaves. Once cooked, slice the prepared cake into three equal layers and cut the cocoa loaves lengthwise into strips.

3. Step

Melt 100g sweet chocolate with 70g milk using a double boiler (or place a heatproof bowl over a pan of hot water). Stir until smooth. In another bowl, whip 160ml heavy cream with 15g sugar, then mix in the melted chocolate. Spread a generous amount of the chocolate filling over the first cake layer, then place the second layer on top and repeat the process. For the second layer, make a ring of filling around the edges and spread chocolate inside. Place the final cake layer on top. Refrigerate for a while to set.

4. Step

In a bowl, whip 140ml heavy cream with 12g sugar and 1 teaspoon of vanilla extract until soft peaks form. Spread the whipped cream evenly over the entire cake. Arrange the cocoa loaf strips on top and finish with an additional layer of whipped cream.
