  • 3 eggs
  • 2g (1/4 tsp) salt
  • Black pepper (to taste)
  • Parsley (chopped, to taste)
  • 2 soft tortillas
  • Mozzarella cheese (as desired)
  • Pepperoni (as desired)
  • Cooking oil

Directions

  1. In a bowl, crack the eggs and add salt, black pepper, and chopped parsley. Mix well using a spoon until fully combined.

  2. Heat a pan over medium heat and lightly grease it with cooking oil. Place one tortilla in the pan and pour the egg mixture evenly over it. Lay another tortilla on top of the egg mixture.

  3. Cook for a few minutes until the bottom tortilla turns golden. Flip the tortilla stack carefully and cook the other side until golden and crisp.

  4. Sprinkle a generous amount of mozzarella cheese and pepperoni slices on top of the cooked tortilla stack. Cover the pan with a lid to let the cheese melt and steam the pepperoni. 

  5. Once the cheese is melted and bubbly, remove from heat, slice, and serve warm.
