This recipe starts with a basic dough made from flour, water, and yeast, which is left to rise before being shaped into flatbreads. Ingredients

  • 220 ml water
  • 1 teaspoon yeast powder
  • 1 tablespoon cooking oil
  • 2 cups flour
  • 1/2 teaspoon laban (or substitute plain yogurt)
  • 4 eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Green onion (kali), chopped
  • Additional 2 tablespoons cooking oil for frying

Directions

  1. In a mixing bowl, combine 220 ml of water, 1 teaspoon of yeast powder, and 1 tablespoon of cooking oil. Mix thoroughly with a spatula to create a liquid base. Gradually add 2 cups of flour and 1/2 teaspoon of laban (or yogurt) to form a smooth dough.

  2. Cover the dough with a lid and let it rest for 20 minutes. After this, remove the lid, give it a quick stir, and cover again to rise for an additional 1 hour.

  3. In a separate bowl, beat 4 eggs with 1 teaspoon of salt, 1 teaspoon of black pepper, and chopped green onions. Let the egg mixture rest for 1 hour, stirring occasionally.

  4. Heat a pan over medium heat and add 2 tablespoons of cooking oil.

  5. Grease your hands with a little oil, shape the dough into rounds or buns, and place each one in the hot pan. Fry on both sides until golden brown.

  6. Remove the buns from the pan, garnish with sauce, and serve with your favorite side dish.
