Ingredients

  • 86g sausage (about 4 pieces)
  • 2 crab sticks (or 2 strips of kimbap meat)
  • 1 white green onion
  • ½ onion
  • 3 shiitake mushrooms
  • 1 king oyster mushroom
  • Carrots (as desired)
  • 3 eggs
  • 700ml water
  • Starch mixture: 1 tbsp (13g) starch + 3 tbsp water
  • 2 tbsp (16g) soy sauce
  • 1.5 tbsp (15g) oyster sauce
  • 1 tsp (3g) salt
  • 1 tbsp sesame oil (added at the end)

Directions

  1. Finely chop the onion, white green onion, king oyster mushroom, and shiitake mushrooms. Slice the sausage into small pieces. Cut the carrots into thin strips (amount as desired). Tear the crab sticks or kimbap meat into small pieces.

  2. Crack 3 eggs into a bowl and beat well. In a separate bowl, mix 1 tbsp (13g) starch with 3 tbsp water until smooth.

  3. Heat 3 tbsp of cooking oil in a pan over medium heat. Add the white green onion and sauté to make fragrant green onion oil. Add the sausage and stir-fry for about a minute. Add the chopped vegetables and stir-fry until slightly softened. Pour in the soy sauce and oyster sauce, stirring well to coat the ingredients. Add 700ml of water and bring to a boil.

  4. Once the mixture starts to boil, season with 1 tsp (3g) of salt. Add the crab meat (or kimbap meat) and let it boil for about 30 seconds. Slowly pour in the starch mixture while stirring, adjusting to a light, slightly thickened consistency. Gently drizzle in the beaten eggs, turn off the heat, and stir lightly to create silky egg ribbons. Finish by adding 1 tbsp of sesame oil, stirring gently to incorporate.
