- 18 oz. (500 g) beans
- 70 fl. oz. (2 liters) water
- 4 bay leaves
- 1 chili pepper
- 3 onions, chopped
- 1 tsp. tomato paste
- 1 cup tomato puree
- 3.5 oz. (100 g) walnuts
- 5 garlic cloves
- 1 tsp. salt
- ½ tsp. sugar
- 1 tsp. ground coriander
- 1 tsp. paprika
- ½ tsp. black pepper
- 2 oz. (60 g) fresh parsley, chopped
- 5 tbsp. oil

In a large pot, boil the beans in water. After the first boil, discard the water to reduce bitterness. Refill the pot with 70 fl. oz. (2 liters) of fresh water, add bay leaves and chili pepper, and cook for 70 minutes until the beans are tender.

In a separate pan, heat 5 tablespoons of oil over low heat. Add the chopped onions and sauté for 7 minutes until translucent. Stir in the tomato paste and cook for an additional 2 minutes. Add the tomato puree and simmer the mixture for a few minutes until well combined.

In a blender, combine 2 cups of the cooked beans along with half of their cooking liquid. Add the walnuts, garlic cloves, sugar, coriander, paprika, and black pepper. Blend until smooth.

Pour the blended mixture back into the pot with the remaining beans and liquid (1½ cups). Simmer for 5 minutes, allowing the flavors to meld. Stir in the chopped parsley just before serving.
