Directions
1. Step
In a large pot over medium heat, add a drizzle of olive oil and the butter. Add the chopped onions, season with salt, and stir in the sugar. Cook, stirring occasionally, until the onions turn a deep golden brown.

2. Step
Stir in the chopped garlic and cook for about a minute. Sprinkle in the flour, stirring well to coat the onions. Pour in the apple cider vinegar, add thyme, and season with black pepper. Gradually add the broth while stirring, then toss in the bay leaves. Let the soup simmer over medium heat for 30 minutes to blend the flavors.
3. Step
Preheat your oven to 180°C (350°F). Arrange baguette slices on a baking tray lined with parchment paper. Brush both sides with olive oil and toast until golden brown.
4. Step
Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls. Top each bowl with a slice of toasted baguette and a generous amount of cheese.
5. Step
Place the bowls under the broiler until the cheese melts and turns golden brown. Serve hot and enjoy the rich, comforting flavors!
