  • ½ tsp cinnamon
  • 125g butter
  • 120g sugar
  • 8g vanilla sugar
  • Pinch of salt
  • 2 eggs
  • 320-350g flour
  • Powdered sugar (for dusting)

Directions

  1. Blend the dates into a paste. Add walnuts and blend until well combined. Mix in the cinnamon, blend again, and transfer the mixture to a bowl.

  2. In a mixing bowl, combine butter, sugar, vanilla sugar, and a pinch of salt. Mix well. Add the eggs and mix until fully incorporated. Gradually add flour (starting with 320g) and mix until a soft dough forms. Adjust with extra flour if needed.

  3. Take small portions of dough and roll them into long strips. Flatten each strip slightly and spread the date-walnut filling on top. Fold the dough over the filling, sealing the edges. Roll gently into a log shape and press the top lightly with a slotted spoon for texture. Cut into bite-sized pieces.

  4. Preheat the oven to 180°C (356°F). Place the cookies on a baking tray and bake for about 20 minutes, or until lightly golden. Remove from the oven and let cool. Dust with powdered sugar before serving.
