Directions

  1. In a large mixing bowl, combine 50 g sugar, 1 tbsp dry yeast, orange zest (if using), 250 g slightly warm milk, 1 egg, 60 ml oil, 500 g flour, and ½ tsp salt. Mix the ingredients thoroughly until a smooth dough forms.

  2. Cover the dough with plastic wrap and a clean kitchen towel. Let it rise for about 1 hour in a warm place. Once risen, roll the dough out and cut it into small round shapes using a round cutter. Cover the cut dough pieces with a towel and let them rest for an additional 20 minutes.

  3. Heat oil in a pan over medium heat. Fry the dough pieces on both sides until golden brown. Remove and drain on paper towels.

  4. Prepare a paper cone or piping bag filled with jam or pastry cream. Inject the filling into each fried doughnut. Roll the doughnuts in sugar until well coated.
