Directions
1. Prepare Vegetable Mixture
Thinly slice the cabbage and soak in water for 5 minutes. Drain and rinse well. Mix together green onion, carrot, sweet corn, 2 eggs, and 2 pinches of salt.
2. Setup Tortilla
Add a little oil to a pan. Place a portion of the vegetable mixture and spread it in a round shape, slightly smaller than the tortilla. Place one tortilla on top and gently press. Then place a plate over the tortilla and carefully flip the pan.
3. Add Cheese & Finish
Place the flipped side back in the pan with a bit of oil. Brush ketchup on top and sprinkle mozzarella and cheddar cheese. Fold the tortilla in half and press to seal. Cook until both sides are golden and crispy. Garnish with parsley and serve hot.
