  • 4g (1 tsp) salt
  • 3g (1 tsp) baking powder
  • 1g (0.3 tsp) baking soda
  • 60g warm water (below 36°C)
  • 30g (3 tbsp) allulose or sugar
  • 6g (1 tbsp) instant dry yeast
  • 140g warm milk
  • 18g (3 tbsp) room temperature egg
  • 20g (2 tbsp) melted unsalted butter
  • Condensed milk (for serving)

Directions

1. Step

In a large bowl, combine bread flour, all-purpose flour, salt, baking powder, and baking soda. Mix well.

In a separate bowl, mix warm water (below 36°C), allulose (or sugar), and instant dry yeast. Stir until the yeast dissolves, then add this mixture to the dry ingredients.

In another bowl, beat the room temperature egg. Add 3 tbsp of the beaten egg and warm milk to the flour mixture. Stir until the dough starts to come together. Once sticky, incorporate the melted butter and knead until smooth. If the dough is too sticky, lightly oil your hands.

Cover the dough and let it rise in a warm place (below 36°C) for about 1 hour. Once doubled in size, deflate the dough and transfer it to a floured surface.

Divide the dough into long strips. Keep the remaining dough covered with a damp cloth or plastic wrap to prevent drying. Flatten each strip slightly, then cut into 2 cm intervals. Lightly brush water in the middle of one piece and stack another piece on top to form pairs.

6. Step

Heat oil to 160°C. Carefully drop the dough into the hot oil, immediately flipping them to ensure even puffing. Fry until golden brown, then remove and drain on a wire rack.
