- 490g (2 medium) potatoes
- 40g cornstarch
- 40g all-purpose flour (or soft/plain flour)
- 1g (0.3 tsp) curry powder
- 2g (0.5 tsp) paprika powder
- 1g (2 pinches) salt
- A pinch of black pepper
- 10g (1 tbsp) cooking oil
- 60g cold water

Directions
1. Step
Peel and dice the potatoes into small cubes. Rinse them in cold water to remove excess starch, then drain. Boil the potatoes in salted water for about 4 minutes, cooking them 50-60% through. Drain and rinse with cold water to stop the cooking process.

In a mixing bowl, combine: Curry powder, Paprika powder, Salt & black pepper, Cornstarch & all-purpose flour, Cooking oil & cold water. Stir gently until combined—avoid overmixing.

Add the parboiled potatoes to the batter and mix carefully. The batter should be sticky and web-like, clinging to the potatoes. Line a pan with parchment paper, then shape the mixture into small circular fritters, ensuring they hold together.
4. Step
Heat oil to 180-190°C (355-375°F). Place the fritters into the hot oil and remove the parchment paper. Fry for about 5 minutes, until golden brown. Increase the heat to 190-200°C (375-390°F) and fry for an additional 20-30 seconds for extra crispiness. Drain on paper towels and serve hot.
