Directions

  1. Wash the potatoes thoroughly. Cut them into small pieces and place them in a bowl. Transfer the uncut pieces to a frying pan, add just enough water to cover them, and simmer for about 15 minutes until softened. Drain the water and transfer the potatoes to a large bowl.

  2. Using a slotted spoon or a potato masher, mash the potatoes until smooth.

  3. Add black pepper (1/6 tsp), garlic powder (1/5 tsp), chili powder (1/4 tsp), salt (1/4 tsp), cooking oil (1 tbsp), and cornstarch (90 grams) to the mashed potatoes. Mix until all ingredients are well incorporated.

  4. Transfer the potato mixture to a piping bag or a plastic bag, snipping off one corner to create a small opening. Pipe the mixture onto a clean surface in long strips, then roll each strip to form a log shape.

  5. In a frying pan, heat enough oil to cover the bottom of the pan. Fry the potato logs for about 10 minutes, turning occasionally, until golden brown and crispy on all sides.
