Ingredients

  • 300g bread flour/wheat flour
  • 190ml milk
  • 25g sugar
  • 3g yeast
  • 3g salt
  • 28g unsalted butter
  • 120g onion, chopped
  • 300g chicken breast, chopped
  • 4g corn starch
  • 15ml soy sauce
  • 15ml oyster sauce
  • Black pepper (to taste)
  • 1.5g salt
  • 45ml water
  • 8g minced garlic
  • 30ml cooking oil
  • Mozzarella cheese (as needed)
  • Bread crumbs (as needed)
  • Oil (for deep frying)

Directions

  1. In a bowl, mix milk, sugar, and yeast with a spatula. Add bread flour/wheat flour and mix until combined. Knead the dough well with salt and butter until smooth and elastic. Cover with plastic wrap and let it rest for 1 hour until doubled in size.

  2. Chop onions and chicken breast into small pieces. In a separate bowl, mix corn starch, soy sauce, oyster sauce, black pepper, salt, and water to make a sauce.

  3. Heat a pan over medium heat and add cooking oil. Sauté the onions until softened. Add the chicken and cook until it turns white. Pour in the prepared sauce and stir-fry until the liquid is absorbed. Remove from heat and let it cool.

  4. Divide the dough into 9 equal portions and roll each into a ball. Cover with plastic wrap and let them rest for 15 minutes.

  5. Flatten each dough ball and place mozzarella cheese in the center. Add chicken filling on top of the cheese. Seal the edges tightly, shaping into a round bun. Coat each bun with bread crumbs for a crispy texture. Arrange the buns on a tray, cover, and let them rest for 40 minutes.

  6. Heat oil in a deep pan over medium heat. Fry each bun until golden brown and crispy, flipping occasionally for even frying. Remove from oil and drain on a paper towel.
