  • 120g milk
  • 240g milk
  • 3 egg yolks
  • 50g sugar
  • 25g plain flour
  • Vanilla extract
  • 20g butter

Directions

  1. Cut the loaves into 8 equal pieces. In a bowl, whisk together the eggs, sugar, and milk until well combined. Strain the mixture through a sieve to ensure a smooth texture. Dip the sliced bread into the mixture, coating both sides thoroughly. Let the bread soak for at least 30 minutes.

  2. In a bowl, lightly beat the egg yolks. Add the sugar and mix well. Stir in the vanilla extract, followed by the flour, mixing until smooth.

  3. In a saucepan, warm the milk over low heat. Be careful not to overheat, as it may cook the eggs too quickly. Slowly pour the warmed milk into the egg mixture, stirring continuously. Strain the mixture through a sieve to remove any lumps.

  4. Return the strained mixture to the pan and cook over low heat, stirring constantly to prevent sticking. Once it starts to thicken and bubble, remove from heat. Stir in the butter until fully incorporated. Transfer the custard to a container, cover with plastic wrap (making sure it touches the surface to prevent a skin from forming), and refrigerate until cool.
