Take 1 slice of Castella cake and crush it finely in a blender. In a bowl, combine 200 ml of fresh cream with 20 g of sugar. Mix on low speed until the sugar dissolves, then increase the speed to whip the cream until stiff peaks form. The cream should be firm enough not to drip.
