  • Egg whites 3
  • Egg yolks 3
  • Sugar 90 g + 1 tsp
  • Salt A pinch
  • Vanilla extract A few drops

Directions

  1. In a mixing bowl, beat the 3 egg whites with a pinch of salt for 1 minute until slightly frothy. Add a few drops of vanilla extract and 90 g of sugar, then continue mixing until well combined. Incorporate the 3 egg yolks and mix thoroughly. Gradually sift in 120–130 g of flour, mixing well after each addition until smooth. Add 1 tsp of sugar, mix again, and ensure the dough is well combined.

  2. Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper. Drop 1 tablespoon of dough per cookie onto the baking sheet, spacing them evenly. Bake for 12–15 minutes or until the cookies are lightly golden. Allow the cookies to cool before serving. Enjoy them with a cup of tea or coffee!
