  • Flour –160 g
  • Sugar – 120 g
  • Butter – 80 g
  • Cottage cheese – 150 g
  • Sour cream (or yogurt) – 50 g
  • Eggs – 2
  • Raisins – 100 g
  • Baking powder – 1.5 teaspoons
  • Vanilla – a pinch
  • Salt – 1 teaspoon

Directions

  1. In a bowl, toss the raisins with 1 teaspoon of flour. Shake and strain to remove excess flour. Set aside.

  2. In a separate bowl, combine the eggs, sugar, vanilla, and salt. Mix until smooth. Add the melted butter and mix again. Stir in the cottage cheese and sour cream (or yogurt) until fully combined.

  3. Add the baking powder and gradually mix in the flour until a soft dough forms. If needed, add a bit more flour to reach the right consistency. Fold in the floured raisins, ensuring they're evenly distributed.

  4. Line a muffin tin with paper liners. Spoon about 1 teaspoon of batter into each liner.

  5. Preheat the oven to 180°C (356°F) and bake for 25–30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
