In a bowl, combine the flour, baking powder, vanilla, and a pinch of salt. Mix thoroughly.Add the butter and mix by hand until the mixture resembles coarse crumbs. Knead to form a dough.

In a separate bowl, mix the yogurt (or sour cream) with the sugar and egg yolk until smooth.Gradually combine this mixture with the flour mixture, kneading until you have a soft dough. Wrap the dough in plastic wrap and refrigerate for 20-30 minutes.

Beat the egg whites with a pinch of salt until frothy. Gradually add the sugar and continue beating until the mixture is smooth and glossy.

Remove the dough from the refrigerator and divide it into two parts. Roll out one part into a thin sheet. Spread half of the egg white mixture over the rolled dough. Sprinkle with half of the walnuts.

Roll out the second part of the dough and spread the remaining egg white mixture over it. Sprinkle with the remaining walnuts, followed by the dried apricots and raisins.
