Directions

  1. In a bowl, mix 100 g of sour cream (or yogurt) with 1 tsp of baking soda. Once combined, add 1 egg, 70 g of sugar, 100 g of butter, and a pinch of salt. Mix thoroughly. Gradually add 330-350 g of flour, mixing with your hands to form a dough. Chill the dough in the fridge for 20 minutes.

  2. In a blender, combine 150 g of walnuts with 50 g of sugar and blend into a powder. Transfer to a bowl.

  3. In the same blender, combine 200 g of dried apricots with 50 g of sugar and blend into a powder. Mix into a separate bowl.

  4. Remove the dough from the fridge and divide it into two parts. Divide one part into two smaller pieces, roll each piece into a ball, and then roll it out flat. Place the rolled-out dough into a 22 cm baking form, pressing it gently into the shape.

  5. Spread the walnut-sugar mixture evenly over the dough in the form. Roll out another small piece of dough and place it over the walnut layer. Use a slotted spoon to make it fluffy. Spread the dried apricot-sugar mixture evenly on top.

  6. Roll out the remaining large piece of dough and place it over the apricot layer. Press the edges gently with your hands. If needed, make small holes with a slotted spoon. Brush the top with 1 egg yolk and sprinkle 2-3 tablespoons of powdered walnuts.

  7. Bake in a preheated oven at 180°C for 35-40 minutes. Once baked, remove from the oven and cut into small pieces.
