Directions
1. Step
In a bowl, mix 2 egg yolks, 1 whole egg, and 60 g sugar until combined. Add 25 g cornstarch and 250 ml milk, then heat the mixture on the stove until thickened. Remove from heat, add 30 g butter and 20 g water mixed with 2 teaspoons instant coffee. Stir until smooth. Transfer the mixture to a bowl, cover with a lid, and allow it to cool.
2. Step
In a pan, melt 75 g milk, 75 g water, and 55 g butter. Add a pinch of salt and 80 g flour, stirring until the dough forms and pulls away from the sides of the pan. Remove from heat and let it cool slightly. Gradually mix in 2 large eggs (or 3 small eggs) until smooth. Transfer the dough into a piping bag, pipe onto a baking sheet, and bake at 180°C for 40 minutes.
3. Step
Once the choux pastry is baked and cooled, make a small hole in each pastry and fill with the prepared coffee cream. For the glaze, mix 130 g icing sugar, 1 egg white, and 20 g water with 2 teaspoons instant coffee until smooth. Drizzle the glaze over the filled pastries, let it set, and enjoy!
