Ingredients

  • 2 eggs
  • 50g (5 tbsp) granulated sugar
  • 50g (5 tbsp) brown sugar
  • 1g (2 pinches) salt
  • 2g (0.5 tsp) baking powder
  • 100g cake flour
  • 80g melted unsalted butter
  • 4.5g instant coffee (about 1 tsp)
  • 16g (2 tbsp) hot water

Directions

  1. In a small bowl, dissolve 4.5g of instant coffee in 16g (2 tbsp) of hot water. Set aside to cool.

  2. Fill a larger bowl with hot water (below 80°C / 176°F) and place a mixing bowl on top to create a warm water bath. In the mixing bowl, combine 2 eggs, 50g granulated sugar, 50g brown sugar, and 1g salt. Whisk until the sugar is fully dissolved and the mixture becomes creamy.

  3. Sift together 100g cake flour and 2g baking powder, then gradually add to the egg mixture. Pour in the cooled coffee mixture and 80g melted butter, stirring gently to combine. Be careful not to overmix to avoid creating foam.

  4. Lightly grease a coffee bean-shaped mold. Fill each cavity only 50% full with the batter. Preheat the oven to 150°C (302°F). Bake at 150°C for 20 minutes until golden brown.
